Easter Ideas


I thought I'd give you a few ideas of what you could stir up for Easter, just in case you're in the same boat as me, trying to figure out what to cook for your Easter feast.

Start the day off with a yum-e breakfast.  May I suggest these pancakes that are a huge favorite of my teen son:

This salad.  Oh how I love and adore this salad!  It's the nuts that make it so good.  No, it's the dressing that makes it so good.  It's the nuts and the dressing that make it so good.

Us Andersons cannot celebrate anything without my Aunt Joyce's Buns.  Joyce's Buns are a necessary ingredient for any occasion.  And my cute nephew, Jeffrey, is obsessed with them.  He loves me when I make Joyce's Buns.

And now we're down to my favorite part of any meal, dessert!  I'm going to make a few dessert suggestions for y'all!

This cake is simply the best!  It's got carrots, and carrots go with bunnies, and bunnies go with Easter so it's the perfect Easter dessert.  And it's the perfect cake!

I'm trying a new cake recipe this Easter.  If it turns out good I'll post it next week.  And if it doesn't I'll be wishing I'd stuck with one of my old favorites.  Either way Easter will be wonderful because we'll be with family and we'll take time to remember the real reason we celebrate this special holiday!

Chocolate Cookie Pretzels

 Ingredients

    2/3 cup butter, softened
    1 cup sugar
    2 teaspoons vanilla extract
    2 eggs
    2-1/2 cups all-purpose flour
    1/2 cup HERSHEY'S Cocoa
    1/2 teaspoon baking soda
    1/4 teaspoon salt


Directions

     Heat oven to 350°F.

     Beat butter, granulated sugar and vanilla in large bowl unilt fluffy. Add eggs; beat well. Stir together flour, cocoa, baking soda and salt; gradually add to butter mixture, beating until well blended.

     Divide dough into 24 pieces. On lightly floured surface, roll each piece with hands into pencil-like strip, about 12-inches long. Place strip on ungreased cookie sheet. Twist into pretzel shape by crossing left side of strip to middle, forming loop. Fold right side up and over first loop. Place about 2 inches apart on cookie sheet.

     Bake 8 minutes or until set. Cool 1 minute; remove from cookie sheet to wire rack. Cool completely. Sprinkle with powdered sugar, if desired.

From whence it came:  I found this recipe, many years ago, in the Hershey's Make It Chocolate cookbook.  One day I decided to give it a try, and it has been a family favorite ever since.  Sometimes I sprinkle them with powdered sugar, but usually we just gobble them down plain.  And when I say gobble, I mean gobble!

Why it's blogable:  My kids love love love these cookies.  Right this very second my teen son is begging me to make these for him.  And when my teen son begs, I tend to listen.  He's a good boy.  A really really good boy.  He makes me happy, and I want to make him happy right back.  So I'm gonna bake him up a batch of these cookies and sit back and enjoy the happiness.  Oh, and in case you're wondering about The Spy Who Loves Me, he is a humongous fan of these cookies.  They are one of his all time favorites, too.

Super Secret Poppy Seed Dressing

2 c. salad oil
¾ c. apple cider vinegar
1 medium brown onion
1 c. sugar
2 T. poppy seeds
2 T. mustard
1 t. salt

Put all ingredients in blender and let ‘er rip!  Makes 2 quarts!  Two very yum-e quarts!

From whence it came:  I can't tell you.  It's a secret!  I can't tell you and you can't make me!  There is literally nothing you can do to get me to divulge this info.  Well, almost nothing.  Any and all bribes involving Tim McGraw will be considered.  Other than that, there is nothing you can do to make me divulge the secret behind from whence this yum-e recipe came!

Why it's blogable:  This recipe is so much better than anything you can buy in a bottle at the store.  And healthier, too.  No preservatives or weird ingredients that you can't pronounce.  It couldn't be easier to make and it is a crowd pleaser every time!

You simply must:  Make this salad dressing recipe and then make this salad and these nuts!  Then wait for people to bow down and kiss your toes!  They will!  That's what this recipe will do for you.  It will make you more popular than you ever dreamed possible.
