Crockpot Cheesy Chicken with Potatoes

6 chicken breasts
6 medium potatoes, thinly sliced
1 can cheddar cheese soup
1 can low fat cream of chicken soup
1 c. skim milk
1 T. garlic salt
1 t. pepper

Mix soups and milk, add potatoes.  Place ¼ mixture in bottom of crockpot, put in chicken, sprinkle with garlic salt and pepper.  Pour remaining sauce and potatoes over chicken.  Cook on low 6-7 hours or high 3-4 hours.  (I took the lid off for the last 45 minutes because it was pretty soupy.  It thickened it up a bit.) 

From whence it came:  Sorry guys, I don't remember.  This is a Weight Watchers recipe but I don't remember how it fell into my hot little hands.  I may have scribbled it down at a WW meeting back in the day.  Back in the day when I was riding high on the WW wagon!  I really need to drag my chubby self back onto that wagon!  And this recipe is the perfect way to do it!

Why it's blogable:
  You won't even know this recipe is healthy when you make it.  You'll swear it's full of unhealthy stuff, like butter and cheese.  But it's not.  It's full of healthy stuff, and it's really tasty!  This recipe makes 6 servings and each serving is only six points.  At least that's what it says on my scribbled recipe.  When I made this for my family they all loved it and no one even knew it was good for them!  My silly family often turns up their nose if they think something is good for them.  It's a full time job trying to trick these goofballs!  Try this if you're in the mood to be tricky!

Meat Pie

1 lb. lean ground beef
2 very large potatoes
1 can French onion soup
1 T. Worcestershire sauce
Salt and Pepper to taste
1 c. grated cheddar cheese

Brown meat and drain.  Add soup, Worcestershire sauce, salt and pepper.  Simmer until most of the liquid is absorbed.

Meanwhile, boil potatoes until tender; drain and mash.  Put the meat in a casserole dish and cover the meat with potatoes.  Top with cheddar cheese.

Bake at 375 degrees for 15-20 minutes.

From whence it came:  This recipe was published in a church cookbook by my really good cook of a sister-in-law, Geralene.  I've shared a few of her other yum-e recipes and this one is a winner, too!

Why it's blogable:  This is a kid friendly recipe!  The Spy Who Loves Me likes this as well, but he's just a big kid so that's no surprise.  My kids have always liked this recipe and now that they're cool teenagers they still do.  My teen daughter asked me to make this the other night and I didn't have all the ingredients on hand so I got my act together and made it tonight.  And she was happy.  Until her pesky brother started bugging her at dinner.  Then she wasn't happy.  Then she was ticked off.  And cranky.  So she shot him her very best stink eye, and he just laughed.  And then she was even more ticked off.  Are you folks getting a picture of our dinner atmosphere tonight?  It wasn't a Norman Rockwell moment, that's for sure.  But the good news is that we ate together as a family.  And we narrowly avoided a food fight!  I'm pretty proud of us!

Getting back to the recipe:
  Sometimes I double the recipe because this is good leftover.  Also, sometimes I use dry onion soup instead of the canned stuff.  If you use the dry mix, just add it to two pounds of ground beef along with two cups of water, and cook it until most of the water cooks off.  Just let it simmer and the water will magically disappear.  If you're in a hurry you can use instant mashed potatoes.  I've done that sometimes, but it is better if you use real ones.  And speaking of the potatoes, I always add a little bit of evaporated milk and butter to make them creamy and flavorful.  Just add enough to get the consistency you like. When I made this tonight I didn't double the recipe but I used six medium potatoes.  We like lots of potatoes in our pie.  You can do it however you think is best.  There is no right or wrong way to make this recipe.  Try it out and you'll see what I mean.

Campfire Potatoes


Ingredients

* 5 medium potatoes, peeled and thinly sliced
* 1 medium onion, sliced
* 6 tablespoons butter
* 1/3 cup shredded cheddar cheese
* 2 tablespoons minced fresh parsley
* 1 tablespoon Worcestershire sauce
* Salt and pepper to taste
* 1/3 cup chicken broth

Directions

* Place the potatoes and onion on a large piece of heavy-duty foil (about 20 in. x 20 in.); dot with butter. Combine the cheese, parsley, worcestershire sauce, salt and pepper; sprinkle over potatoes.

* Fold foil up around potatoes and add broth. Seal the edges of foil well. Grill, covered, over medium heat for 35-40 minutes or until potatoes are tender. Yield: 4-6 servings.

From whence it came: I don't think I've ever mentioned Taste of Home magazine on my little blog. Well the time has come to tell you that I love Taste of Home! I found this super great recipe in a Taste of Home magazine years ago and it instantly became a family favorite. If you've never checked out Taste of Home, you must! The recipes are so good and not weird like some of those magazines that have all that fancy yucky silly food in them. I'm happy to finally give Taste of Home the props it deserves!

Why it's blogable: Every time I've made this recipe people have loved it! These potatoes have a great flavor and cooking outdoors is always fun. I have a terrific marinade recipe that I will share with you soon, and if you make that chicken and these potatoes your family will carry you around on their shoulders as if you'd just scored the winning touchdown in in the Superbowl! You'll be a hero for sure. I'll post the marinade recipe tomorrow so you can try it out this weekend if you want to. Hey, here's a great idea...get the hubby and kidlets to barbecue for y'all this weekend for Mother's Day. Pick out a few simple recipes and let them go to town while you take a drooling nap. Don't you just love to take a drooling nap on a Sunday afternoon? You know, the kind where you're so out of it that you wake up and realize to your horror...and delight...that you actually drooled! Look for the marinade recipe tomorrow. Weird ingredients, fabulous flavor! I promise!
